Hopkinton: Try Something Unique and Delicious for Your Super Bowl Gathering: Quesadillas!

Even thought the Patriots aren't in the Super Bowl, you can still make your get-together festive and tasty by serving Quesadillas.

In addition to your regular "game day" menu items including chicken wings, appetizers and chips and dip, another delicious and unique option for a main dish is grilled quesadillas.

Quesadillas are versatile, easy and inexpensive. Guests can enjoy a wide varitey of toppings and ingredients.

I like to provide three different main ingredients including grilled chicken, steak tips, and shrimp along with a varitey of cheeses for guests to choose from.  Chopped vegetables including zucchini, broccoli, onions, tomatoes, olives, sliced avacado and corn can be added depending on preference.

Quesadillas can be made fresh, with fillings set out into bowls for guests to choose their own delicious creations.

Hint: Quesadillas are great for people with food allergies, as they can manage what ingredients go into their meal.

Top with salsa and sour cream and voila, you have a perfect main dish!

Quesadillas can be grilled in a traditional frying pan with olive oil, or made with a panini press or a quesadilla maker. Here are some ingredient options:

Grilled Quesadillas

tortilla's - 8-10 inches round (white flour, wheat, sundried tomato or spinach) Snyder's Corn Tortillas at Colella's are gluten free.

sliced -  chicken, steak, pork chops, or cooked baby shrimp.

cheese pairings - chicken & mozzarella or cheddar, steak & blue cheese, shrimp & feta cheese, pork chops & swiss.

vegetables - grilled onions, corn, zucchini, broccoli, olives, avacado, chopped tomatoes.

toppings - sour cream, salsa.

Heat frying pan, panini maker, or quesadilla maker and coat the bottom with olive oil or spray butter. Hint: Regular butter or spray butter makes the tortilla's golden and crispy.

Add fillings and place another tortilla on top. Close lids or place another frying pan on top to press the ingredients together.  Remove and slice with pizza cutter. Serve with sour cream or salsa.

Enjoy!
