Wheat Berry Waldorf Salad

Have you tried Wheat Berries?  Most people I ask look at me like I have three heads. "Berries made of wheat...What?"  

Wheat berries are whole wheat kernels, and they're a delicious and healthy whole grain.  They're much higher in protein, fiber and nutrients than brown rice, and they have a delicious nutty flavor with a more substantial chewier texture.  

Wheat berries take a while to cook, so make a large batch, and you'll have them for several meals.  Cooked wheat berries also freeze really well, and you can reheat them and toss them in salads, chili or pasta sauce for a little added protein and fiber.  I love adding them to warm grilled vegetable salads, or cold ones like this Wheat Berry Waldorf Salad because they turn a regular salad into a quick and easy meal.

Look for them in the natural foods section of your grocery store.
